The birds outside are particularly chirpy today and it just might mean sprinter, spring that feels and acts like winter, is moving out. The light sing-song of robins is so cheerful and upbeat, it is hard to imagine anymore sprinter surprises. As I gaze outside my window, I can see all the animals in my yard scampering about like preschoolers on a play-date. “Olly Olly all come free,” it is safe to come out of hiding.

What does all this wildlife activity have to do with food? It is a reminder and affirmation of good things to come. Something which I appreciate after the long winter hibernation. The first of the local spring vegetables are ramps, spring mushrooms, and asparagus. Yet, these local harvests are not yet available, and I must look westward and south for fresh produce. I am so envious of the produce I see displayed all over Instagram from California farmers markets. California food bloggers and chefs spill their bounty on the kitchen counter and photograph their treasures for all of us to see, making me want to transport myself into their photo. Our day will come, at least the ground is no longer frozen.

California Baby Artichokes

In the meantime, we can enjoy produce, like baby artichokes, from California and pretend we are in full spring bloom. Baby artichokes are spilling over the produce baskets at grocery stores across the country. They are more tender than full size artichokes, but no less flavorful. At this stage the baby artichoke bud has yet to develop the choke, making them slightly easier to prepare and eat. I believe them to be the perfect size and an ideal first course meal or appetizer.

Seeing artichokes always brings me back to my childhood in Northern California, where artichoke plants grew wild in the hills around my neighborhood. I thought they were the strangest looking plants around and I never touched them. To me they were like the dinosaurs of the plant kingdom, with their prickly and ancient looking buds and jagged leaves.

I’ll never forget the first time I ate an artichoke when I was a young girl. I gladly tried them being ever so eager to appear older and more sophisticated than I was. As I sat staring at my steamed artichoke, I studiously watched and listened to Dad’s instruction as he peeled off each leaf, dip the bottom fleshy part in warm melted butter then scrape off the meat between his teeth. With each step, Dad would explain and demonstrate how to get to the heart of the artichoke, what he referred as the “prize” and purpose for all that work. He spoke so ominously about the choke, saying we would choke if we ate the choke, hence the name. This terrified me, but his safe and loving expression in his fatherly eyes told another story, so I proceeded cautiously but without hesitation.

Braised Baby Artichokes

Up front there is more prep work when you braise baby artichoke hearts, as opposed to steaming them whole, but the hearts get nicely flavored from the braising liquid and become so tender. Fortunately, because they are small it does not take that much time to trim off all the outer leaves. Braised artichokes are delicious eaten straight from the braising liquid, but I like serving them with a warm sauce made with the braising liquid and anchovies and capers. The anchovies and capers add extra body which compliments the mild artichoke flavor but does not overwhelm it. I purposely kept the anchovies on the light side for that reason.

If you are not a fan of anchovies, reduce the braising liquid as mentioned but omit the anchovies. Taste and adjust the seasoning to your preference then drizzle the sauce over the baby artichokes. This cooking method is also delicious with full-grown artichoke hearts.

Braised Baby Artichokes with Anchovy Caper Sauce

Baby Artichokes are braised in a stock seasoned with lemon, garlic, white wine and herbs. The artichokes are finished with a sauce made with a reduction of the braising liquid, anchovies and capers. There is just enough of the anchovy flavor to compliment the artichokes.

Ingredients

Braised Artichokes

  • 16 baby artichokes about 1 lb. 9 oz (729 g)
  • bowl full of water
  • 1 lemon
  • 2 TB extra virgin olive oil
  • 4 sage leaves
  • 1 bay leaf
  • 4 garlic cloves peeled and green germ removed
  • 1/2 tsp fennel seeds
  • 5 black pepper corns
  • 1/2 tsp Kosher salt

Anchovy Caper Sauce

  • Braising Liquid
  • 2 T TB extra virgin olive oil Or butter
  • 4 anchovy fillets
  • 1 tsp capers drained and rinsed
  • 1 TB white wine or vermouth (optional)
  • Salt and pepper to taste
  • garnish with chopped parsley or chives

Instructions

  1. Peel off three strips of lemon peel with a vegetable peeler.  Set them aside. Thinly slice the garlic cloves and set aside. 

  2. Fill a medium bowl with water and the juice of one lemon. You want just enough water to cover the artichokes. 

  3. Trim the artichokes. Pull off the tough outer leaves by pulling them straight down and off. Continue until all the tough leaves are off until you get to the tender light green leaves. 

    With a sharp paring knife, trim a sliver off the end of each stem and clean around the edge where you pulled off the leaves. You do not want to cut away any of the artichoke meat, just trim the base to clean off any fibrous parts. Trim off about a 1/4 inch off the top of the baby artichoke. 

    Cut the artichoke lengthwise into quarters. As soon as you are finished prepping each artichoke, add the sliced wedges into the bowl filled with lemon water. The lemon water will prevent the artichokes from discoloring. 

  4. In a sauté pan add 2 TB of extra virgin olive oil and heat up over medium heat. Add the slices of garlic, lemon peels, sage, bay leaf, black peppercorns, fennel seeds to the olive oil and sauté for about a minute. Add the artichokes, 2 1/2 cups (625 ml) of the lemon water and Kosher salt, and bring to a boil. Cover with a tight-fitting lid and turn down the heat. Simmer the artichokes until they are tender when pierced with a fork or to taste, about 20 minutes. 

  5. Once the artichokes are tender remove them using a slotted spoon and place in a bowl to keep warm. Taste the braising liquid and add wine or vermouth if needed. Boil the braising liquid and reduce to a 1/2 cup (125 ml). Add the anchovies and break them up in the sauce. Add the capers. Simmer briefly to meld the flavors and taste. Adjust the sauce with more wine or other seasoning if needed.  

  6. Arrange the artichokes on a platter or shallow bowl, drizzled with the anchovy caper sauce. Garnish with chopped parsley and lemon zest. 

    Braised baby artichokes are best eaten warm or at room temperature. The braised artichokes can be chilled, but the sauce should be warm.

Maida’s Lemon Cake

Everyone needs those back-pocket recipes at their fingertips and Maida’s Lemon Cake is one of mine. Maida Heatter’s, “The Best Damn Lemon Cake” comes from her cookbook, Cakes and her New Book of Great Desserts. She explains in the recipe’s summary the cake got its name from the first thing her friends said after taking one bite. She is the guru of baked desserts and celebrated her 90th birthday last year. I have always found her desserts reliable and well tested, especially her cake recipes. They are all classics that never go out of style.

Lemon cakes come in so many shapes, sizes and styles and this recipe is no exception. It is a loaf cake with a light lemon glaze on top that soaks into the cake. Early in my marriage, I made this lemon cake all the time. Unfortunately, I stopped because baking for pleasure was replaced with the pleasure of taking care of my children with a couple of baking projects squeezed in between.

Recently, I was reminded of this lemon cake recipe after being treated to a slice of Lemon Lulu Cake from Mother Myrick’s Bakery (A bakery in Manchester VT.) They are different types of lemon cakes, but the bright lemon flavor is similar. Lemon Lulu cake has a lighter texture and made in a Bundt pan, whereas Maida’s Lemon Cake has ground almonds in the mix and keeps its’ moisture even after a couple of days.

The only downside to this recipe is, it is not something to make at the last minute. Ideally, the cake rests for 12-24 hours before you serve it. During this resting period the cake’s lemon flavor gets more pronounced and the cake becomes very moist from the glaze. You must plan accordingly. Yet, the advanced planning has its merits too. Bake it a day or two before you need it leaves you with more time to do other activities on the day of. Also, this cake gets better with age. It freezes well, is perfect for travel, picnics and gifts.

Best Types of Cake pans for Lemon Cake

My lemon cake did not rise as high as it should because my aluminum loaf pan is larger than the one specified in the recipe. It is hard to come by an 8½ x 4½ x 2¼ inch (21 x 11 x 6 cm) heavy-duty aluminum loaf pan that does not have a Teflon coating, made of glass, or made with a dark metal. These materials are all no-no’s in Maida’s book. I am partial to Nordic Ware baking pans, but their loaf pan has an 8 cup (2 L) capacity. Chicago Metallic makes a loaf pan with the right dimensions and material as well as Wilton and Williams and Sonoma.

My cake is also darker, because it cooked faster because the pan was not made with heavy-duty aluminum. My pan is a generic lightweight aluminum pan I bought over 30 years ago at the grocery store.  It might be a lightweight, but it is still going strong and baked it fair share of Pumpkin Bread over the years.

This baking experience reminded me, I should trust my instinct and not always follow a recipe blindly, I knew I should have checked the cake earlier than specified, but I followed the directions instead. Fortunately, I do not mind a darker crumb and the glaze keeps everything moist. See the links in the Notes of the recipe for the types of adjustments to make if you use glass or dark metal pans.

 Lemon Cake

The only adjustment I made to the recipe is I added almond meal (flour) instead of blanched almonds. It is not always easy to grind nuts as fine as you can get with almond meal. Often the almonds start turning into a paste before you get the right consistency you want. Do not add a half cup of almond meal, measure the almond meal by weight, not volume. The two measurements are not equal. You may use the volume and weight measurement for the blanched almonds.

If you have the almond meal use that to flour the pan instead of bread crumbs. It will do the same job and add extra almond flavor to the loaf.

Maida's Lemon Cake

When Maida Heatter explains her name for "The Best Damn Lemon Cake," came from the first things her friends said after taking a bite. You just know it is good. Everyone needs a reliable lemon cake to bring to friends or just add some sunshine at the end of a meal. This loaf cake has great sweet lemon flavor but is not too sweet to turn you off. It is great paired with coffee and tea. I also like it with fresh berries. 

The instructions say to let the cake sit for 12-24 hours before serving so plan accordingly. I found the cake is even more delicious the day after it is made.

Ingredients

Lemon Cake

  • ½ cup (60 g) blanched almonds (or 60 g almond meal)
  • cup (185 g) sifted all-purpose flour
  • 1 tsp baking powder
  • 3/4 tsp Kosher salt
  • ¼ lb (115 g) butter 1 stick
  • 1 cup (235 g) granulated sugar
  • 2 eggs
  • ½ cup (125 ml) whole milk
  • 1 oz (29 ml) real lemon extract 1- 1 fl oz bottle
  • Freshly grated zest from 2 extra large, or 3 medium lemons

Lemon Glaze

  • 1/3 cup plus 2 TB (113 g) granulated sugar (4 oz)
  • 1/3 cup (75 ml) fresh squeezed lemon juice

Instructions

Lemon Cake

  1. Set the rack in the lower third of the oven and preheat the oven at 350°F (175°C / Gas Mark 4). Butter an 8½ x 4½ x 2-inch (21 x 11 x 6 cm) loaf pan with a 6 cup (1.5 L) capacity. Lightly dust the loaf pan with very fine bread crumbs or almond meal and set aside. (See note about pan). Line the bottom of the prepared loaf pan with a piece of parchment paper. 

  2. Ground the almonds in a food processor or nut grinder till they are very fine but are not getting pasty. Or use the almond meal. 

  3. Add the sifted flour, baking powder and Kosher salt to a small bowl and stir with a wire whisk until the ingredients are well incorporated. Set aside

  4. Melt the butter in a small sauce pan set over low heat. Cool slightly before using.   

  5. In a bowl of a stand mixer, add the melted butter and sugar. (Make sure the eggs are cool enough so they will not cook the eggs.) Turn the speed to medium and beat to mix. Turn down the speed to low and add the eggs one at a time, thoroughly mixing each egg in the batter between each additions. Scrape down the sides of the bowl between additions. 

  6. While the mixer remains on low speed, add the flour mixture in three additions and alternate with the milk in two additions. Beat in the ingredients thoroughly between each addition but be careful not to over-mix the cake batter. Also, stop the mixer to scrape down the sides and bottom of the bowl between each addition. Add the lemon extract and beat it in. 

  7. Turn off the mixer and remove the bowl. Add the lemon zest and ground almonds (or almond meal) to the batter and stir in with a rubber spatula. 

  8. Pour the cake batter into your prepared loaf pan and bake for 65-75 minutes. The cake is done when a cake tester inserted in the middle of the cake and all the way to the bottom, comes out "just barely clean". The cake will crack down the middle because the outside cooks faster than the inside of the cake. This causes the cake to crack as the insides cook and the cake rises. 

  9. Remove the cake from the oven and let it rest in the pan for 2 minutes on a cooling rack. 

  10. After the two-minute cool, slowly baste the lemon glaze over the top of the cake. Take your time basting the cake so a nice even glaze coats the top of the cake and soaks into the body, about 5 minutes. 

  11. Let the cake rest in the pan until it is tepid, mostly cooled down. Run a knife around the edge of the pan and invert the cake to loosen it out of the pan. Remove the parchment paper from the bottom of the cake. Turn the cake right side up and cool on the rack. 

  12. Once completely cooled, wrap the cake with plastic wrap or aluminum foil and let it rest on the counter for 12 - 24 hours. Or place in the refrigerator for 4 hours. Or the freezer for 2 hours before serving. I prefer the results after the 12-24 hour period, but if you need it for the same day then the freezing options works fine. Just let it defrost before you serve it. 

Lemon Glaze

  1. A couple of minutes before the cake is done cooking, make the glaze. Add the sugar and fresh squeezed lemon juice in a small sauce pan set over medium heat. Stir the mixture until the sugar is completely dissolved. Do not let the syrup come to a boil. Turn off the heat and set aside until needed. 

Recipe Notes

Maida is very specific about what type of pan will produce the best results. You might think it is a lot of smoke about nothing but for baking, everything you use from ingredients to the oven affect the final outcome of your baked good.  She is adamant about not using a non-stick pan, dark metal pan, and glass loaf pan. Her pan of choice is a heavy-duty aluminum pan. From my experience, I agree with her about the dark metal pans and glass pans, they do not bake as nicely as a heavy-duty light-colored aluminum pan does.   

I used a large aluminum loaf pan, but it was not a heavy-duty one. It cooked up faster than the recipe suggested and got darker. It was either that or use my dark metal non-stick pan, which would have been two strikes against me. If you can't take her advice, use the loaf pan you have, but be forewarned. Early Spring Asparagus

Now that it is officially spring, we can look forward to young spring asparagus. These odd looking green spears push through the thawed ground just in time to dissolve away the winter blues. The early spring asparagus spears are tender and often thin, needing little in the way of preparation and adornment. I found the simpler the better for these young spears. If you grow your own asparagus, then you know how sweet and fresh the first spears taste. My friend grows asparagus and eats the first spring spears raw because they are that delicious and tender.

I am not as fortunate as my friend, so I rely on the store and farmer’s market for my spring asparagus. From the farmers market they are slightly older than just picked, however at the grocery they are much older. When buying asparagus look for spears with tight tips and smooth skin. As they get older, the tips open and look like they are about to sprout. If you have the room, stand the asparagus spears, loosely packed and upright standing in a container with a shallow layer of water. If not, untie the bundle and let them rest loose in a plastic bag in the crisper drawer of the refrigerator.

 How to Prepare Spring Asparagus

The best preparation is to cut off the woody end about 2 inches (5 cm) from the bottom. Though, how much actually depends on how old the asparagus was when harvested. I used to bend the asparagus in half and let the spears break where the woody core ended, and the fresh stalk began. Often, I felt there was a lot of waste using the bend and break technique, so I started cutting them and gauging for myself. If the asparagus spears are older, you may need to trim off a longer piece. You can feel with your fingertips where the tender part and the woody part meet.

As the season progresses, and with fatter asparagus spears, the stalks become fibrous making the outer skin stringy and hard to bite. I peel a thin layer, using a vegetable peeler, off the skin from the bottom to about an inch or two below the tip. You can peel the asparagus if you want a fancy dressed-up presentation as well.  How to Cook Asparagus

This stove top grilling method produces asparagus the whole family will enjoy. It never ceases to amaze me how this cooking technique turned our sons’ heads and hearts and they began eating their asparagus. Needless to say, we started cooking asparagus using our grill pan all the time after that. No complaints, no “Eat your vegetables,” conversations at the dinner table. Life was good. Before the grill pan method, I would quickly blanch asparagus, then season with butter or olive oil. It produces great asparagus, but it wasn’t everyone’s favorite.

To make stove top grilled asparagus, all you need is a grill pan or skillet, some olive oil, balsamic vinegar, or sherry vinegar, Kosher salt and freshly ground black pepper. My grill pan does not accommodate a full pound (466 g) of asparagus, so I cooked them in two batches. A larger 12-inch (30 cm) skillet might hold a pound (466 g). As the asparagus cooks in the pan, the heat gently chars the asparagus in spots creating extra flavor. You do not get the smokiness of the outdoor grill, but there is just enough sear for extra oomph.

Early Spring Asparagus

Early spring asparagus is tender and sweet and does not need a lot of extra adornment for the flavor to shine. This is a simple preparation using a grill pan or skillet and nothing more than olive oil, salt and pepper, with or without balsamic vinegar and fresh herbs. 

Herbs like basil, tarragon, thyme, chives or arugula flowers taste delicious with asparagus. Fresh lemon or orange zest. You can also garnish with chopped walnuts and/or a diced hard-boiled egg.

Ingredients

  • 1 lb (466 g) fresh asparagus
  • 1 TB extra virgin olive oil
  • pinch of Kosher Salt less than half teaspoon
  • Freshly ground black pepper
  • 2 tsp balsamic vinegar optional

Instructions

  1. Place a grill pan or heavy-duty skillet on the stove set to medium-high heat. Let the pan heat up. Place you hand about 6 inches (15 cm) above the pan. If the heat is starting to feel hot and uncomfortable then your pan is ready, about 4 minutes. It should not be smoking hot. 

  2. While waiting for the pan to heat up, Using a sharp knife, trim off the woody end of the spear, about 2 inches (5 cm). Place the spears in a bowl. 

  3. Drizzle the spears with extra virgin olive oil, and add pinch of kosher salt and black pepper. Toss to evenly coat. 

  4. Arrange the spears in one row across the grill pan or skillet. You won't fit the whole pound (466 g), but add as much as you can fit in a single layer. Allow the spears to cook undisturbed for a few minutes, then turn them over on the other side. Cook undisturbed for a couple of minutes more and turn again. Keep cooking and turning until the asparagus spears are just tender when pierced with a fork but still has some bite. 

  5. Turn off the heat and sprinkle some balsamic vinegar or sherry vinegar over the asparagus spears and turn over a few times to coat. 

  6. Serve immediately.

Deviled Eggs, 4 Ways

During the 70’s and 80’s, Deviled Eggs was a popular appetizer. Many cocktail parties had a tray of these creamy bite size egg nibbles politely passed around on a tray for your convenience. Of course, I was a teenager then, but during my teenage years I made money as a hostess helper where I prepped, cooked, served, and cleaned up at people’s parties. I loved the job because I got to see what people where serving and how they entertained.

For some reason Deviled Eggs lost some popularity in the 90’s. I believe it was because people believed eggs were unhealthy. Fortunately, eggs have made a comeback, and with that so have Deviled Eggs. I love Deviled Eggs and based on the reaction I hear from people outside my home, so do a lot of people. I believe they are a perfect appetizer for a cocktail party. One that is not too rich, are easy to eat while holding a drink, and provide some needed protein to help fill one’s appetite. In general, I believe eggs are comfort food and just like egg salad, deviled eggs have that creamy wholesome comfort I crave.

How to Cook Hard Boiled Eggs for Deviled Eggs

The key to making good deviled eggs is making perfect hard-boiled eggs. Ones that are not rubbery, with cooked but tender yolks, have an even oval shape, and have a shell that is easy to peel off. What I discovered is there are almost as many tricks as there are recipes, with most of them providing inconsistent results. Over the past couple of years, I discovered two techniques for making hard-boiled eggs that are consistently easy to peel and do not get over-coked. No technique is entirely foolproof, but these two techniques are very reliable.

First, according to Food52, warm up the eggs in hot tap water while you wait for the water to boil. Putting eggs straight from the refrigerator into a pot of boiling water causes the shells to crack and give the eggs a misshapen appearance. Warming the eggs for a few minutes helps the egg whites set into their natural oval shape and prevent the shells from cracking.

Second, if you only adapt one of these techniques, this is the one to do whenever you cook hard-boiled eggs. Shock the cooked eggs in ice water for 15 minutes or more just when they finish cooking. In layman’s terms, this technique causes the egg whites to constrict and pull away from the sides of the shell. With everything else being a constant, this one technique produces hard-boiled eggs that are easy to peel.

Also, the myth about younger fresh eggs being hard to peel is true. Older eggs like store-bought or farm fresh eggs that are at least 2-weeks-old are much easier to peel. Other than the shock from the ice bath, the age criteria is the only “egg lore” I found to be consistently correct. If you are making hard-boiled eggs for deviled eggs, make more than you need so if you get a couple of eggs that don’t peel easily or are misshapen, you have extra to choose from. Use up the extra eggs for egg salad or chopped and sprinkled over asparagus with some olive oil.

There are endless ways to personalize this classic appetizer and I have provided four variations for you to choose from. First off is the foundation recipe which all the other recipes are a variation from. Each recipe is proportioned using 4 hard-boiled eggs, giving you a total of 8 deviled eggs. The recipe is easily adapted to doubling the amounts. With the egg yolk filling, I look for a smooth consistency with a very slight amount of grain, and a creamy balanced flavor between the mayonnaise, mustard and egg yolks.

From the foundation recipe I built two other variations. The first I made Pickled Deviled eggs with cornichons, a couple of the onions from the bottle, and pickling liquid to the foundation recipe. This added a subtle pickle flavor complimented with some heat from a light sprinkle of hot paprika. If you can’t find cornichons use sweet gherkin pickles or relish

For decadent deviled eggs, I used either white or black truffle oil and slightly adjusted the foundation recipe. If using white truffle oil, it will have a subtler flavor, but it is still delicious. The egg filling gets a double dose of truffles from truffle salt and truffle oil, which I am lucky enough to have both on hand. However, if you only have truffle oil, you will still have the truffle essence, albeit a subtler one. If you are fortunate enough to have a real truffle, mince up a sliver and add it to the egg yolks or use as a garnish. Italian truffles are not available now (early Spring), but usually become available for a couple of months in the summer, and in the winter.

The recipe for spinach deviled eggs is from Mark Bittman, How to Cook Everything. He made them sound so good I just had to try them out. He is right they are delicious with a great flavor of spinach and Romano cheese. The filling has a dark green color which was different from what I expected. (I thought they would have a pale green color.) Yet, I believe they will surprise and delight your guests as something delicious and unexpected.

His recipe calls for Parmesan Cheese, but I prefer the sharpness of Romano Cheese. If you wish, use Parmesan cheese, but make sure it is the Parmesan Reggiano from Italy.

Deviled Eggs

Deviled Eggs are a timeless appetizer perfect for a cocktail party. The foundation recipe is a traditional recipe made with mayonnaise, Dijon mustard and some hot paprika. All the variations start from this traditional recipe with some tweaks. Listed below are four variations to choose from to suit your mood and preference. All of them are delicious.   

The Spinach Deviled Eggs is from Mark Bittman's cookbook, How to Cook Everything. 

Deviled eggs are best eaten the day they are made. Assemble right before serving.

Ingredients

  • 4 hard-boiled eggs
  • 2 ½ TBS mayonnaise
  • 1 tsp Dijon mustard
  • Pinch of Kosher salt
  • A few rounds of fresh ground black pepper
  • A couple of dashes of hot paprika to taste and garnish
  • Dill for garnish only for the foundation recipe

Instructions

  1. Foundation Recipe

    Use a sharp paring knife, cut the hard-boiled eggs in half lengthwise. To make a clean cut, wipe off the knife between each egg. Scoop out the yolks and place into a small bowl. Reserve the egg whites. Mash the egg yolks with a fork until they look like small pebbles and almost a paste. Add the mayonnaise, Dijon mustard, salt, pepper and mix and mash together with your fork until it gets as smooth as you can make it by hand. Taste the mixture and adjust with any of the ingredients to get the consistency you wish. Sprinkle a couple of dashes of hot paprika, or sweet paprika if you do not want the spice.

  2. Spoon or pipe the egg yolk filling into the body of the cooked egg whites.  Garnish with a tip of dill and a dusting of paprika and black pepper.

  3. Serve immediately or refrigerate covered in plastic wrap until needed. Deviled eggs are best eaten soon after they are made. 

  4. Cornichon Deviled Eggs

    Follow the directions of the foundation recipe for deviled eggs. Once the egg yolks are mixed and add 4-6 diced cornichons and two diced pickled onions from the cornichons jar. Add about a half teaspoon and up to 1 teaspoon of the juice from the jar of cornichons. Taste and adjust the seasoning. Spoon the deviled egg filling into the body of the hard-boiled eggs and garnish with sliced cornichon and a dash of smoked paprika. 

  5. Poor Man’s Truffle Deviled Eggs

    Use the foundation recipe, except use only 1 ½ tablespoons of mayonnaise and add one tablespoon of white or black truffle olive oil. Use the same amount of Dijon mustard, but add a pinch of truffle salt instead of Kosher salt. (Optional, add 1 TB of butter.) Mix until smooth. Taste and adjust the seasoning. Pipe or spoon the egg yolk mixture into the egg white bodies. Garnish with fresh ground black pepper and drizzle with truffle oil. 

  6. Spinach Deviled Eggs

    Steam 3 oz (81 g) of fresh spinach (cleaned and stems removed) for 5 minutes. When cool plop into a flour sack kitchen towel and squeeze out as much water as you can. Or put in a fine mesh strainer and press out as much liquid as possible. Place the squeezed spinach on a cutting board and mince several times over. In a small bowl mash up the egg yolks and add the spinach, 1 ½ TB mayonnaise, and 1 TB extra virgin olive oil, 1 TB of slightly softened butter, 1 tsp Dijon mustard, and a pinch of freshly grated nutmeg, less than a ¼ tsp. Mash everything together until smooth. Add ¼ cup, (65-70 ml) finely grated Romano Cheese and stir to completely mix. Taste and adjust the seasoning. Pipe or spoon the filling into the hard-boiled egg whites. Garnish with thinly sliced pickled peppadews.

Hard Boiled Eggs

This recipe will consistently create hard-boiled eggs that are easy to peel, have a great shape and no gray ring around the yolk

Ingredients

  • 1-6 eggs
  • 3 quarts (3 liters) water

Instructions

  1. Fill a pot large enough to hold the eggs without crowding them with 3 quarts of water. Turn on the heat to high. Bring the pot to a boil. 

  2. While the water is heating up on the stove, add the eggs to a bowl filled with hot water. Let the eggs warm up in the bath. This step help prevent the egg shells from cracking as they cook and maintain an oval shape. 

  3. Carefully, add the eggs one at a time to the pot of boiling water. A large slotted spoon or spider are great for this job, and cook for one minute. Turn down the heat to a simmer and cover the pot.  Cook for 10- 12 minutes. 10 minutes will give you eggs that are cooked but have a slightly soft middle spot in the yolk. 12 minutes will give you eggs where the yolks are cooked but not dried out.

  4. Just before the eggs finish boiling, fill a large bowl part way with ice then fill it with cold water. Set aside.
  5. When the eggs are finished cooking, immediately remove them from the pot and add them into the bowl with the ice water. Use a slotted spoon to lift the eggs out of the hot water before you add them into the ice water. Let them cool in the ice water for 15 minutes or longer, adding more ice if necessary to keep the water cold.
  6. To peel the eggs, gently tap the egg against the side of the sink to make cracks all over the surface, then roll the egg back and forth on the counter’s surface. Starting at the wide bottom end of the egg, peel away the shell under cold running tap water. Repeat until all the eggs are peeled. Place the peeled eggs in a bowl of cold water and keep in the refrigerator uncovered until needed.

Sliding into Spring Succotash

I feel like I am jumping the gun today by writing a post and recipe for succotash. It is March, almost April, and without a doubt corn and baby lima beans are summer vegetables. Yet, I have delicious memories enjoying succotash with my Easter dinner. This vegetable dish is one I could eat in any season in a year. Fortunately, good quality frozen vegetables are available making it possible to eat this light but hearty side dish whenever I please. I happen to love succotash, especially paired with ham.

My first introduction to succotash was after getting married and living in New York. Succotash was a regular vegetable dish at my in-laws Thanksgiving and Easter dinners. I clearly remember how my sister-in-law made it with corn, lima beans, green bell pepper and plenty of fresh ground black pepper. Green beans are sneaking into my memory recipe as well but not as clearly as the other ingredients. It was love at first bite. When I went for seconds, I usually came back with another helping of succotash.

There is just something about succotash that sings to me. Maybe because this meal has a simple nature implying ease and comfort. Or, because each vegetable compliments the other for a harmonious vegetable medley. The flavors taste fresh, sweet and light, even when made with frozen vegetables.

Also, what’s not to love about saying “Succotash” with its fun and jazzy rhythm. As it happens, Herbie Hancock believes succotash has a jazzy rhythm as well and wrote a song titled, “Succotash” on his Inventions and Dimensions album.

History of Succotash

Succotash dates back to New England Native Americans from the word, msíckquatash, meaning boiled cut corn kernels. Back in the 17th century succotash mostly consisted of corn and native beans like cranberry beans. The English settlers soon adopted this hearty and nutritious stew and made it throughout the year from dried corn and beans.

Succotash grew in popularity throughout the US during the great depression and other eras of economic hardship. The ingredients were readily available and inexpensive and made a meal with a lot of sustenance. Over time, succotash evolved from a stew into a lighter side dish made with additional vegetables added to the corn and beans. Any succotash variation is acceptable, as long as corn and beans feature prominently in the ingredients.

With the invention of refrigeration and frozen foods, we can enjoy succotash year-round. However, make this with fresh corn during the summer months when corn is sweet and beans are fresh and just harvested. You will need to soak and cook the beans ahead, but the corn will quickly cook with the other vegetables after the fresh kernels are cut right off the cob.

Succotash Variations

Serve succotash with a grain like brown rice or farro for a plant-based main entrée meal. When legumes and grains combine they create a complete protein with all the essential amino acids accounted for.

During the winter months, substitute the zucchini with winter squash.

Make succotash with corn, cranberry beans and green beans with a splash of cream and choice of a fresh herb.

Use succotash for the filling of a pot pie, either with grains or other proteins like chicken or turkey.

Make succotash into a vegetable soup just by adding vegetable or chicken stock with some aromatics. Or, turn it into a crab and succotash chowder with fresh crab and cream.

Simply Succotash

Succotash is a vegetable dish traditionally made with corn, and cranberry beans. This recipe builds up from the traditional recipe by adding to the corn lima beans, zucchini, sweet bell pepper, onion and fresh herbs. Any fresh herb like sage, thyme, tarragon, chervil or basil will nicely compliment the corn and vegetables.  

For a plant-based main entrée, serve succotash with a grain such as farro or brown rice.

Ingredients

  • 1 lb (16 oz / 454 g) frozen corn 4 ears of fresh corn
  • 10 oz (285 g) frozen baby lima beans
  • 2 TB extra virgin olive oil
  • 1 large Vidalia onion about 10 oz (300 g)
  • 1 red or green bell pepper 7-8 oz (219 g)
  • 1 tsp Kosher salt, divided
  • 1 clove garlic
  • 2 zucchini about 1 lb (454 g)
  • 3 sprigs fresh thyme
  • 3 oz (87 g) grape tomatoes
  • Several rounds Freshly ground black pepper
  • 5-6 leaves fresh sage tarragon, basil, chervil, lemon thyme

Instructions

  1. Prep the Vegetables

    Defrost the frozen corn and lima beans. If using fresh corn on the cob, slice the corn kernels off the cob and set aside. Peel and dice the onions. Cut the bell peppers in half lengthwise and remove the seeds and white pith. Cut into long 1/2-inch (1.5 cm) strips then dice into 1/2-inch (1.5 cm) pieces. Peel, remove the green germ and mince the garlic. Cut each zucchini in half lengthwise, then each half into quarters, lengthwise. Cut across each wedge into pieces about a half-inch wide (1.5 cm). Slice the grape tomatoes in half. Set each vegetable aside in separate piles. 

  2. Sauté the Succotash

    Place a large sauté pan or skillet, about 12-inches (30 cm) or larger, over medium-high heat. Add the extra virgin olive oil and heat up. Before the olive oil gets hot and smoky, add the diced onions and bell pepper. Stir to coat the vegetables with olive oil, and add ¼ teaspoon of Kosher salt.  Sauté until the onions are translucent but not browned, and the vegetables have softened, about 4-5 minutes

  3. Add the minced garlic. Stir and cook until the garlic releases its aroma, about a minute. 

  4. Add the zucchini and stir to mix the vegetables together. Add the thyme sprigs, another ¼ teaspoon of Kosher salt and several rounds of fresh black pepper, and stir. Continue to sauté the vegetables until the zucchini starts to soften, about 4 minutes, but is not cooked all the way through.

  5. While the zucchini is cooking, slice the fresh sage leaves, chiffonade cut, and set aside. 

  6. Add the corn, lima beans and tomatoes. Stir, taste and correct the seasoning with more salt. Sauté the vegetables until they are cooked through and the corn and lima beans are warm, about 4 minutes. Add the sage and stir. Taste for seasoning and add more salt, sage, or black pepper if necessary. Turn off the heat. 

  7. Serve warm. 

Recipe Notes

For another version of succotash, make it with corn, lima beans, green beans with a splash of cream. Season with herbs like tarragon, chervil or basil.
